Goal and objectives of the project The project's goal was parameters to produce probiotic fermented beverage from red seaweed.
Main results

Theoretical results: Selected species of Hydropuntia eucheumatoides as fermented beverage
H. eucheumatoides is hydrolyzed by a mixture of Viscozyme L and Lactozyme, then the hydrolysate is fermented by two strains of Lactobacillus casei and boulardii to create a beverage. This drink has identified food safety criteria. It was demonstrated that the fermented beverage from H. eucheumatoides exhibits antioxidant and enzymatic activity to indicate that it is a probiotic beverage.
