Goal and objectives of the project

- Utilization of marine fish scales to obtain gelatin with high quality.
- Extraction of gelatin from marine fish scales in laboratory scale by using enzyme and electrochemically activated solutions with the yield of 12-14%.
- Produce 1kg gelatin with protein content > 90%.

Main results

- Theoretical results: Extraction of gelatin from marine fish scales by using enzyme Alcalase® 2,4L FG and electrochemically activated solutions was done successfully. The yield of obtained gelatin was 14,0-15,2% (200g gelatin/procedure). The sensory properties, proximate composition, amino acid composition, molecular weight disstribution, microbiological and physicochemical characteristics of gelatin were determined.
+ The quality of the final product was controlled in Directorate for Standards Metrology and Quality, including the protein content and microbiological values. The protein content was 97,44% (on dry weight basis). The microbiological values of gelatin met the standards for application in the food and pharmaceutical industries.
- Applied results: Based on this study, the extraction of gelatin from marine fish scales can be developed in pilot scale. The final product could be used in the different areas.

Novelty and actuality and scientific meaningfulness of the results

This is the first study in Vietnam about the extraction of gelatin from marine fish scales. The yield of gelatin was 14,0-15,2%. The obtained gelatin contained a high content of protein and had the relatively high physico-chemical properties.
